Scrumptious Holiday Recipes Made with Vermont Produce

Our Vermont grown produce and Vermont made products are so good, people travel from all over the world to sample our fine Vermont made fare. As well as, visit our farmers markets to take some of our world renowned produce and maple syrup home with them.

The holidays are such a magical time of the year, filled with family and friends and scrumptious food. After sampling our delicious menu filled with our favorite Vermont grown produce such as; roasted beets, roasted squash, or sweet potato polenta cakes, you’ll understand why people come from far and wide to visit our farmers markets and take home their own Vermont grown produce.

We would like to share a few recipes with you that you can try at home this holiday season. **These recipes are not the ones we use at our resort.

Sweet Potato Polenta Cakes

Ingredients:

2 Vermont grown sweet potatoes( peeled, baked and pureed in a food processor)

2 cups of water

2 cups of heavy cream

3/4 cup of polenta grind (cornmeal)

4 tablespoons of brown sugar

1/4 cup of shredded asiago cheese

Salt and pepper to taste

Preparation:

In a medium size sauce pan boil the water and heavy cream.

Reduce heat to medium and slowly add in the polenta grind (cornmeal) stirring constantly.

Continue to cook over low heat for 15 minutes, stirring occasionally.

Add the pureed sweet potato, shredded asiago cheese, and the brown sugar, stir well to combine all the ingredients.

Cook for an additional 5 minutes.

Add salt and pepper to taste.

Vermont Maple Syrup Roasted Beets

Ingredients:

2 cups of beets (peeled and cut into quarters)

1 tablespoon Vermont maple syrup

Preparation:

Preheat oven to 400 degrees Fahrenheit

Place beets in oven safe dish

Drizzle Vermont maple syrup over them

Bake for 40 – 50 minutes (until the beets are soft)

Vermont Maple Syrup Roasted Beets and Apples

Ingredients:

2 cups of beets (peeled and cut into quarters)

2 cups of apples (peeled and cut into quarters)

3 tablespoons of Vermont maple syrup

Preparation:

Preheat oven to 400 degrees Fahrenheit

Place beets and apples in oven safe dish

Drizzle Vermont maple syrup over them

Bake for 50-60 minutes minutes (until the beets and apples are soft)

All three of these scrumptious holiday recipes made with Vermont produce and products are perfect dishes for any holiday meal, potluck dinner or holiday party!
